Today, I’m chatting with you about a new product from one of my favorite brands. I don’t take too many sponsored posts anymore, so when I do, you can know that it’s because it’s a company/product that I use and love. International Delight, a company I’ve worked with billions of times, has recently come out with some new products that make holiday entertaining super simple…ready made hot chocolate and egg nog. Both are available in the refrigerator aisle at your local grocery store and you just heat and serve. (for the hot chocolate, obviously…the egg nog you just pour and serve.) So, when considering how I could help them find ways that my readers could find their products helpful, I thought about something that so many of us are doing right now, cookie swaps.

I like the idea of just throwing down different kinds of cookies on a few trays, having plenty of to-go containers, (because you know you don’t want tons and tons of cookies leftover in your home!) adding a few cute decorations, some festive music, and celebrating casually with friends and family.

I recently baked a ton of cookies for the holidays, and one of our favorites that we have to make every single year is a recipe that came from my mother-in-law. (and I’m pretty sure it even came from her mom…) It’s super simple, but totally looks and tastes like the holidays, Christmas Mint Brownies.
This recipe can be super simple by using a boxed brownie mix (9×13 style) or you can use my very favorite brownie recipe of all time. I went with the made from scratch brownies, which are thicker than box mix brownies, so I was sure to cut the pieces into smaller servings.
Ingredients
- 1 box brownie mix (plus needed ingredients)
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 tsp peppermint extract
- 6 ounces chocolate chips
- 1/4 cup butter
- green food coloring
Directions
- Bake brownies as directed on package.
- Let cool completely.
- Mix together 1/2 cup butter, powdered sugar, peppermint extract, and green food coloring.
- Spread on top of cooled brownies, allow to sit for one hour.
- Melt together chocolate and butter. Spread over the top of the mint mixture.
- Place in the refrigerator to allow chocolate to set.
