Sometimes, I can get pretty creative with flavor combinations. Other times, I’m a complete bore. Maybe it’s because I figure that if you find something that’s perfect, why mess with it?
That’s basically the way I feel about orange and cranberry. If I’m thinking about making something with cranberry, you can bet that I’m going to throw some orange in there somehow.
It’s just what I do.
So, it should come as no surprise that I give yooooooouuuuu………
Orange Cranberry Muffins.
These would be perfect to make for Christmas morning, as the flavors of orange and cranberry practically scream Christmas.
Okay, maybe that honor belongs more to peppermint and gingerbread, but you get what I’m saying. Orange and cranberry and perfect Christmas morning flavors.
These don’t take long at all to whip up and will make your kitchen smell amazing.
Definitely give these a try soon. Before the Christmas season ends and fresh cranberries are suddenly impossible to find in your grocery store.
Ingredients
- 1 1/2 cups chopped fresh cranberries
- 1 1/4 cups sugar, divided
- 3 cups all-purpose flour
- 1 1/2 tablespoons baking powder
- 1 teaspoon salt
- 1/2 cup butter, room temperature
- 2 eggs, lightly beaten
- 1 cup milk
- Juice of one orange, about 1/4 cup
- 1/2 cup white chocolate chips
- zest of one orange
Directions
- In a small bowl, mix together chopped cranberries and sugar, set aside.
- In a large mixing bowl, whisk together dry ingredients: flour, remaining sugar, salt, baking powder
- Add softened butter and mix with a pastry cutter or two forks until dough resembles coarse crumbs.
- Mix together milk, eggs, and orange juice.
- Add to large mixing bowl and stir together until incorporated.
- Add orange zest and mix.
- Fold in cranberries and white chocolate chips (that have been tossed in a little flour).
- Spoon into lined muffin tins and bake at 400 degrees for 17-20 minutes.
- Allow to cool and enjoy!
