Gluten free baking is something that I know basically nothing about. Of course, I’ve seen the ever growing gluten free section at the grocery store, but really am entirely unfamiliar with what constitutes a product as being gluten free. So, when I received the opportunity to work with Pillsbury, I was intrigued and took it as an opportunity to learn a little bit about it, since it’s really popular in the food world now.
If you’re doing some entertaining over the holidays and have guests coming with gluten sensitivities, you’ll want to be certain to have something for them to eat that won’t upset their systems. But, this could involve a lot of research on your part making sure that each ingredient is going to be okay and even after all that work, you may still be concerned that something isn’t going to be quite right. No worries, friends, I’ve got a recipe for Peppermint Chocolate Chip Cookies that you’ll be able to whip up in a snap and it will most certainly not upset anyone who is sensitive to gluten.
All you’ll have to do is head to your local grocery store and pick up a package of Pillsbury Gluten Free Chocolate Chip Cookie dough. It’s in the refrigerated section near the other cookie doughs. They also have a thin pizza crust and a pie crust, all of which are sitting in my refrigerator at the moment. Throw that baby in your cart and then head over to the cake mix/baking aisle. Grab a jar of the peppermint sprinkles. Then head to the checkout aisle, because you’ve got all you need to make these cookies.
Once you’re ready to bake, simply scoop the cookie dough into one tablespoon sized scoops and roll to form a ball. Then, roll the dough in your peppermint sprinkles and place on an ungreased cookie sheet. Bake as directed on the package and you’re done! The peppermint sprinkles add a nice crunch and some texture to a cookie that would otherwise be really soft.
Now, in all honesty, if you expect these cookies to taste exactly like the refrigerated cookie dough cookies you normally make, you’re going to be surprised. There’s a definite difference. The cookies aren’t quite as sweet as a normal chocolate chip cookie and the chocolate chips are quite soft. It’s basically a texture difference, and they’re still really tasty, I just wanted to make sure that there were no surprises when you tried them for the first time.
