Chia Seed Pudding

Things are going to be kind of quiet around here for the next few days.  We’re on vacation and while I wish I could say that I’m the type of person that has a post scheduled for every day that I’m away, I’m not.

Not even a little bit.

I’m lucky I remember my children when it’s time to leave for vacation.

Ok, not really, but you know….laundry and packing and cleaning is just so much work on its own, the last thing I can handle is quadrupling my work load.

So, I’m sharing a recipe today that I made and photographed a little while back.  Chia seeds are so popular right now and are so good for you.  You can throw them in your smoothies for an added nutritional boost, or make them into a pudding like I’ve done here.  When placed in a liquid, chia seeds plump up, similar to oatmeal.  So, I decided to give chia seed pudding a try to see if I could find a healthier dessert option.

Because I knew I might be encountering a texture issue, I decided to throw some toasted coconut into the mix to try and offset that a bit.  Having never tried chia seeds in this way, I knew I wanted to tread carefully.   Then, while I was at it, I decided to add some Nutella.

Soooo…maybe my dessert just got a bit less healthy.

But I promise, it’s just a little bit of Nutella, so it’s still all good.

Chia Seed Pudding

Ingredients

  • 2 tablespoons cocoa powder
  • 2 tablespoons brown sugar
  • 1 tablespoon Nutella
  • 1/4 cup toasted coconut
  • 1/4 cup chia seeds
  • 1 cup 2% milk

Directions

  1. Whisk together cocoa powder and brown sugar in a small bowl.
  2. Add chia seeds, milk and Nutella to dry ingredients and mix until incorporated.
  3. Pour into individual dessert glasses (I used two) and refrigerate overnight covered with cling wrap until thickened.
  4. Top with more toasted coconut and/or a bit of whipped cream.

So, give this a try and see what you think.  If I’m being honest, for me, it’s not my thing.  I know it sounds strange that I’m posting a recipe that I didn’t really dig on my food blog, but in this case, I think it’s okay.  This was totally a texture thing for me, not a flavor issue.  The textures that I may or may not like aren’t going to be the same as what you like.  So, if you’re looking to try a healthier dessert option, give this one a try! Hopefully, the texture will jive with your taste buds.
