I live in a strange household, you guys. A very strange household, indeed.
Maybe I should re-phrase that…my husband and I live in a strange household.
There’s a myriad of reasons why I say this, but for today, let’s focus on the fact that neither of our children will eat peanut butter. No allergies, no reason why they can’t eat it…they just don’t like it. They’re like peanut butter ninjas, they can smell it a mile away. If you asked me how many times I’ve heard the question “Does this have peanut butter in it?”, the answer would be eleventy billion.
Peanut butter ninjas.
So, this morning, while they were at school, I baked a peanut butter sheet cake. I made it, frosted it, took pictures of it, and quickly discarded any evidence that said cake had ever been here. They’ll never know.
Unless, of course, they read this post. Which they won’t. That much I know for certain.
This cake is really light and has just a slight peanut butter flavor to it. If you want a more pronounced peanut butter flavor, add a little more. Your cake, your rules.
Within reason, of course…this is baking after all.
Ingredients
- 2 cups cake flour
- 1 cup milk
- 6 large eggs
- 1 teaspoon vanilla extract
- 2 cups granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 1/2 sticks butter, slightly softened
- 1/2 cup creamy peanut butter (for richer flavor, add 1 cup peanut butter)
Directions
- In a medium bowl, mix together eggs, milk, and vanilla.
- In a large mixing bowl, mix together flour, baking powder, and salt.
- Add cubes of butter to dry ingredients and mix until incorporated.
- Add half of your wet ingredients and mix.
- Add your creamy peanut butter and mix.
- Add the rest of your wet ingredients and mix until incorporated.
- Pour into a prepared sheet pan and bake at 350 for 20 minutes, or until cake tester comes out clean.
- Allow to cool and top with your favorite chocolate frosting...either homemade or store bought. No judgement here! (I'll be sharing my favorite chocolate frosting recipe next week, so stay tuned for that.)
