Once upon a time, I loved grocery shopping.
I loved to casually peruse the aisles and scour the fresh produce section for new ingredients that I’d never seen before and imagine ways to prepare it. It was relaxing, it was calming, it was a magical time.
Then, I had kids.
Obviously, that is magical and wonderful, too, but….it does put a bit of a damper on the calm and relaxing grocery shopping, doesn’t it? First, you have a baby in an infant carrier and you race through the store like a maniac praying that they’ll stay asleep through the entire trip and not wake up and start wailing.
Then, they’re toddlers, and pulling everything off the shelf that they can reach…whether you need it or not. Suddenly you’re home and saying to yourself, “Why did I buy oyster sauce?” By the time the kids are old enough to patiently follow along at the grocery store, your body has evolved from casual grocery shopper to “Mom Grocery Shopper” and you all begin timing yourself to see how quickly you can exit the store with all groceries in hand. (Or maybe that’s just us…)
But while you’re in Mom Grocery Shopper mode just trying to take your leave as quickly as possible, what’s also running through your head is how you can get your entire family to eat a meal that’s healthy and tasty. Because even though a small group of moms have successfully implemented the “I only make one meal a night” rule, most of us have not been so lucky.
So, recently I made an official declaration (even though I was the only one around to hear it, but whatever…) that I was going to get back to trying new ingredients again. Our meals had become stale and boring and we needed to increase the diversity, the flavor, and the nutrition in our meals. So, tonight, I’ll be introducing my family to bok choy…and I do this knowing full well that it will most likely lead to me making more meals for those who are unimpressed, but what’s life without a little adventure?
Here are a few bok choy menu ideas that caught my eye. If you have one that you love, please, leave the details below in the comments!
