Kale Chips

I know this is going to sound crazy, but I’m sharing my second green food post in a row.

I must be losing my mind.

I haven’t baked in a couple weeks, and while my blood sugar levels are probably thanking me, my sweet tooth certainly isn’t speaking to me at the moment.

I’ve been super busy the last few weeks finding healthier food options for my family.  My husband and I are hard core watching what we eat, and on top of that, I’ve decided that after 9 years, it’s time for my son to stop being the pickiest eater on the planet.  I just don’t have time for that anymore. So, these two situations clashing have required a lot more planning on my part when it comes to meals. Sadly, that leaves less time for baking. But never fear, I promise, I’ll be back next week with a suitably unhealthy dessert that you’ll all love.

Balance, people.  Balance is the name of the game.

So, in the interest of healthy eating, I made kale chips this week. I’ve made them before and while they’re tasty and nutritious, don’t let anyone fool you. They don’t replace potato chips. They’re good, but it’s a different kind of good. A healthy, but salty kind of good.

I’d like to add here that while I love my salad spinner, cleaning it is one of my least favorite jobs in the world. So many pieces. There has to be a better way.

It’s a super simple process, really…especially if your grocery store carries the kale in the bag that’s already perfectly sized for kale chips. Simply wash, place on a baking sheet, drizzle with olive oil and kosher salt (although to give it a little more flavor, this time I chose seasoned salt), and into a 425 degree oven for 10-12 minutes.  I like to use my dark baking sheet because I feel like it helps them get extra crispy.

See? Nicely browned and crispy…soggy kale need not apply.

And since even kale chips need to feel fancy from time to time…….

Short on plans this weekend? Make some kale chips and pop in a movie.  You can snack on them and won’t even miss your chips and popcorn.

Seriously, who am I kidding? Yes, you will.

Let’s just say, it’s a whole lot better than snacking on air. (Don’t you dare try and steal that tag line from me, people of the kale industry.  I know you’ll be tripping over yourselves to get at the rights to that one!)

Honestly, kale chips are really good.  The best part is, you can snack on them and not feel bad about yourself, which is always a win in my book.
