Let’s call this post…a lesson in rolling with the punches.
I had big plans for this post.
Big, big plans.
But, as so often happens when I make big, big plans…a wrench was thrown. A wrench was thrown directly into my plans.
Being that it is summer, and my garden is being overrun by an insane amount of mint, I decided to make a watermelon mint salad. Watermelon hasn’t reached it’s peak here, but it’s definitely tasting better than it has in a while, so I thought throwing it into a salad along with some other flavors would offset the less than ideal flavor coming from the star of the show.
And apparently, I must have been wearing my sassy pants, because I decided to assemble the salad and create a post in video form.
So, I did it. I set the camera up on my tripod juuuust right so that you could see me assembling the salad, but NOT so that you could see that I was wearing the same clothes I’d worn to work out in the garden just a bit earlier.
I looked kind of like floating-salad-making-hands-slash-forearms.
I pressed record, waited a few seconds to make sure the clock started moving, and then went and assembled my salad.
And then realized, I’d forgotten to get the feta from the refrigerator.
So, I paused the camera, got the feta, and fired it back up again, unconcerned about the final product, because that’s why we have editing, right?
So, I finished assembling the salad, grabbed my camera from the tripod and took a few artsy video shots, and moved on…all was good.
Until I went to review the video a little while later.
That’s when I noticed…I only had TWO videos on my camera. The video of me adding the feta, and the artsy shots…where on earth was the video of me assembling the flippin salad?!?!
Long gone, I’m afraid.
And wouldn’t I look foolish if I edited and posted a video of me crumbling feta into an already made salad? Sure, I could add the artsy shots, but let’s be honest, it would be ridiculous.
So, I’m afraid it’s just photos for today. Video will have to wait for another day, when I’m feeling a bit more technically savvy…
Ingredients
- one half of a medium watermelon, chopped into bite sized pieces
- 1 bunch of purple grapes, halved
- half of a medium red onion, very thinly sliced
- 2-3 tablespoons chopped mint
- 1/2 cup feta cheese, more or less to taste
- 2 tablespoons olive oil
- the juice of one lemon or one lime, both are tasty
- salt and pepper
Directions
- In a large salad bowl, whisk together olive, lemon/lime juice, and some salt and pepper.
- Add your chopped watermelon, grapes, and red onion. Toss with dressing.
- Add crumbled feta cheese and toss.
- Refrigerate for a couple of hours to allow the flavors to come together.
- Just before serving, sprinkle on the mint and toss. (There's obviously a lot of tossing with this recipe.)
I was so distraught following the video debacle…this MAY have been my source of comfort…..
