I’m obsessed with photographing fruit these days for my portfolio on istockphoto. The colors are gorgeous and they photograph beautifully. So, when you have tons of blueberries sitting around, what is one supposed to do?
One figures out something to make with those blueberries….
Bring on the individual blueberry clafoutis!
Clafoutis are kind of pancake-like, sort of custard-like, it’s really tough to describe.
But, it’s tasty, so that’s all that really matters.
The best part about a clafoutis, you can throw it all together in a blender, pour it in your greased ramekins, and you’re ready for the oven.

In this recipe, he baked one large clafoutis, and I made mine in individual ramekins. I greased them, added blueberries on the bottom, poured in the clafoutis batter and baked them on a baking sheet at 375 degrees for 25-30 minutes, until the top was browned. The top will be browned but the bottom will still be light and custard-y. Top those with some powdered sugar (and if you’re feeling adventurous, some vanilla ice cream) and dessert is served.
