It’s the holidays, who’s feeling festive? Me, of course…always. Well, honestly, not especially. A friend and I were chatting today about the holidays this year. It seems like it’s flying by without leaving us even a moment to stop and enjoy it. Have you experienced this? Maybe it’s just us.
Because of this, though, my daughter and I have made plans to binge watch all the festive Christmas movies that we love but haven’t had a chance to watch yet this season. Elf, Christmas Vacation, Charlie Brown, you name it, we’ll be watching it. Except for Love Actually, even though it’s my favorite Christmas movie. I mean, she’s 14…and a huge Martin Freeman fan….if you’ve seen the movie, you’ll know why she won’t be watching. (But we’ll be going to see The Hobbit this weekend, so she’ll get to see him there…)
So, on to some festive baking ideas. I love gingerbread. It seems like every year I love it more and more. I made a few gingerbread men with the leftover dough that I had after making our first ever gingerbread house that wasn’t from a kit. (With the exception of the one year my mother-in-law was here and helped me make one.) So, let’s call this my first solo gingerbread house. It was surprisingly simple and I’m really getting into decorating the house. But, when it was time to decorate my gingerbread men, I decided I didn’t want to decorate them with royal icing. I wanted something simpler, thinner, and with a bit more flavor.
Enter my idea for gingerbread cookie glaze using International Delight creamer. Simply make your typical powdered sugar/milk glaze that we’ve all made a thousand times, but substitute the International Delight creamer for the milk. I used the Pumpkin Pie Spice flavor, but you could get really creative and use any flavor you wanted. I also added a bit of vanilla. I use vanilla bean paste and love it because you can always see the flecks of vanilla, which makes everything feel fancier, right?
It’s a quick and simple option for decorating those cookies so that you can sit down with a plate of them in no time and start enjoying the holiday season…and some festive Christmas movies! (And how about add a cup of coffee with some International Delight creamer, too? Just a suggestion…)
