Weeknight dinners can be stressful, can’t they?
When I’m thinking about meals, I like to think ahead so that we can get more than one meal out of every dinner I make. Because sometimes, I don’t feel like cooking dinner. Sometimes, our schedules don’t allow me to make a meal from scratch that night. Sometimes, I don’t want to deal with the dishes that will come from making dinner.
Is there really any better feeling than knowing you have tasty leftovers in the fridge that won’t require you to do any dishes after dinner that night?
No. I doubt that there is.
Kidding, of course there are better feelings than that. But still, that’s a pretty good feeling.
Sometimes these plans backfire on me, though, and suddenly my husband will be asking me, “Did you realize you just spent $30.00 on salmon?”.
Just one more thing to worry about when grocery shopping. This process should really be simpler.
So, when GE Appliances asked me to share a weeknight recipe that could be made in less than 30 minutes, I went to our family standby of Shrimp Scampi Pasta. It’s simple and quick and only requires two pans, so clean up is no problem.
Basically, the whole dish can be made while the pasta is cooking, so once it’s finished, you’re ready to eat, making it perfect for a weeknight.
So, give this recipe a try one night when you’re pressed for time. I know you’ll love the taste, the simplicity, and how quickly you can throw it together.
(If you feel like adding veggies to the mix, I recommend sauteed mushrooms or peas. I’ve even thrown some kale in the water with my pasta while it’s cooking…a great way to add some greens to your meal.)
Shrimp Scampi Pasta
Ingredients:
- one bag frozen shrimp (If you buy the already cooked shrimp, you’ll save yourself a bit of time.)
- 1 small box of thin spaghetti, I prefer the whole grain variety
- 3 tablespoons extra virgin olive oil
- 2 cloves of garlic, minced
- one lemon, zested and juiced
- crushed red pepper flakes
- chopped parsley
Directions:
- Begin by boiling water and adding your pasta to cook.
- While pasta is cooking, heat olive oil in a large skillet until warmed.
- Add minced garlic to the olive oil and heat just until the garlic begins to brown.
- Add the zest of one lemon and your thawed, frozen shrimp.
- Cook until shrimp is warm all the way through, tossing the oil/garlic/zest around the shrimp.
- Add the juice of one lemon and continue to heat.
- Once the pasta is finished, drain the water and add your shrimp to the pasta.
- Top with crushed red pepper flakes and some chopped parsley and dinner is served!
This is a perfect meal for any time of the year, but is especially good during the spring and summer months. It’s a pasta dish that won’t leave you stuffed and miserable. Give it a try!
