I like to send my kids to school with as many homemade goodies in their lunchboxes as possible.
Not that I do it all the time. Not even close. My son is a big fan of the chocolate Little Debbie cakes…especially when they’re of the holiday variety.
But, as often as I can, I like to send them with some of their favorites, which happen to be chocolate chip cookies and brownies.
So, for today’s offerings, I went a little crazy. They’re getting chocolate chips cookies AND brownies. All in one bar.
It sounds like it would be a lot of work, but trust me, it isn’t.
Better yet, this recipe makes a ton of bar cookies, so they’re perfect for large groups, entertaining, or even bake sales.
Simply whip up your favorite chocolate chip cookie recipe and some brownies. I took the easy way out and used a brownie mix rather than my favorite homemade brownie recipe.
Spread your chocolate chip cookie dough into a greased jelly roll pan and then top with the brownie batter. Into the oven at 325 for 30-35 minutes. Allow them to cool, then slice into bars and serve.
It couldn’t be simpler, and it was a super exciting treat for my kids. Give it a try sometime soon!
Can I just say one more thing real quickly? These flowers…they’re some of my faves. (Bleeding hearts…) I wish they’d bloom longer than they do, but they don’t. So, I clipped a few stems and brought them inside so I could enjoy them while they’re around. While I was clipping them, I couldn’t help but hear this song in my head. It’s weird the way the mind works, isn’t it?
Also, it’s a much better choice than what’s been stuck in my head for days upon days. This one. Don’t ask me why, I haven’t heard it for years. Again…the mind is a strange place.
Now, go make some brownie cookie bars and enjoy your Monday!
