Lately, I’ve been trying to cut back on pasta.
Even though I buy the whole grain type and try and serve it with lots of veggies, it’s still not something I want to eat all day, every day.
More carbs means more time on the treadmill and I can honestly say, if I’m going to spend more time on the treadmill, I want it to be because I enjoyed a delicious piece of pie, not a bowl full of penne.
But, that’s just me.
Recently, though, I got a real taste for some pasta and wanted to try my hand at making it myself. I’d tried it once before, and while it tastes really good, getting it rolled out thinly enough with a pasta roller is really tough.
So, on a cold and rainy day, I gave it a try. I’ve always read that pasta is basically just flour and eggs and that you need twice as many eggs as cups of flour. So, if you have one cup of flour, you’ll need two eggs. I went with three cups of flour for this recipe, so I used six eggs.
Clearly, I’m a math genius.
After adding the flour to my large mixing bowl, I added the eggs.
There’s something I really liked about this image, but I can promise you, it isn’t the fact that I look like I’m pouring slime into my a meal that I’ll be serving my family. We don’t generally eat slime with our dinners…
Next up, knead that dough on a floured surface until it’s fully incorporated and not at all sticky. Marble is truly the best surface for project like this…nothing beats it.
Now you have to roll that pasta out just as thinly as you can. I rolled and rolled until it wouldn’t roll anymore, and it was still thicker than I’d have liked. I think one of these is in my future if I’m going to continue making pasta.
See, too thick. Fortunately, I really like the homestyle type noodles, so these were a win for me.
After you cooked your noodles in a pot of salted water for just a couple of minutes, literally…throw them into a bowl and top with your favorite pesto (homemade or store bought, no judgy judging here) and some Parmesan cheese. It’s a great choice for lunch or dinner served alongside your favorite choice for a protein.
