Recently, I’ve been hearing from a lot of people that they don’t like cake with a lot of frosting on it.
I’m surprised I could understand what they said at all because to me, that may as well be a foreign language.
The frosting’s the best part, isn’t it?
As strange as it may seem, my son is one of these people. He’s been known to bring me his cupcakes so I can pull the frosting off and he can just eat the cake. As his mother, I’m happy to help him out…and because I love him, not because it means that I have a big pile of icing all to myself.
Who would think that?
All these comments from people has left me thinking about ways to serve cake that doesn’t include a lot of heavy frosting. I came up with this idea because it was quick and even better, it’s a no bake recipe. You can keep the ingredients on hand and throw this together in moments when guests come over, or you feel like making some dessert for yourself one evening.
Of course, if you choose to make everything completely from scratch, I certainly won’t stop you. I’m just providing you with options…it’s kind of my thing.
Ingredients
- lemon pound cake (all ingredients can be homemade or store bought)
- lemon curd
- whipped cream
Directions
- Take two thin slices of lemon pound cake.
- Spread a generous layer of lemon curd on one piece of pound cake.
- Top with another piece of pound cake.
- Top the "sandwich" with a large dollop of whipped cream and garnish with strawberries or mint.
- Serve immediately and enjoy!
The lemon curd gives this a real zing, but the lack of frosting keeps the recipe from being overly sweet. Give this lemon pound cake dessert a try, it’s simple and delicious!
