Yes, my friends, that time has arrived once again, the time which may leave many of you singing songs like this for the remainder of the year.
It’s pumpkin time.
Of course, there’s a good chance you didn’t need to hear that from me. You probably recognized this already by simply logging on to Pinterest. Pinterest always will let you know what time of year it is.
So, for my monthly post for my friends at International Delight, I decided to *surprise, surprise* go with a pumpkin recipe! Since I love making glazes using my favorite International Delight products, I decided to go with a pumpkin coffee cake. This will be perfect to serve for breakfast or for a snack in the afternoon…or even for dessert. It’s really delicious and will definitely get you in the mood for fall.
Pumpkin Salted Caramel Coffee Cake
(recipe adapted from here)
Ingredients:
- 1/2 cup softened butter
- 1 1/2 cup granulated sugar
- 1 small can pumpkin
- 3 eggs
- 2 1/2 cup all purpose flour
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1 T pumpkin pie spice
- 1/2 tsp kosher salt
- 3 T milk
For topping:
- 1/4 cup all purpose flour
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 2 T butter, melted
For drizzle:
- 1/2 cup powdered sugar
- 3 T International Delight Salted Caramel Mocha creamer
- caramel sauce
Directions:
- Preheat oven to 350 degrees. Grease two 9″ cake pans and set aside.
- In a mixing bowl fitted with a paddle attachment, combine butter and sugar until will mixed and fluffy.
- Add eggs and pumpkin and mix well.
- Add dry ingredients and add slowly while mixing.
- Finally, add the 3 tablespoons of milk to help thin out the batter a bit.
- Combine all crumble topping ingredients and sprinkle over the top of the cakes.
- Bake for 30-33 minutes until cake is done.
- While cake is baking, whisk together your powdered sugar and International Delight Salted Caramel Mocha creamer until it forms a nice glaze that you can easily drizzle.
- After the cake is done baking, allow to cool for 10 minutes, and then drizzle with caramel and then your International Delight glaze.
- Enjoy!
