Today, I’m doing something I haven’t done in a little while…I’m going to introduce you to a new product that I recently found out about and I’m excited to share it with all of you.
A few weeks ago, I received an e-mail from the people at Pacific Foods asking me if I’d like to work with them on a little end of summer entertaining project. My first instinct was to say no, since I don’t generally like to endorse pre-packaged foods. But, before I answered either way, I wanted to do my research. I went to their website and checked them out. Instantly, I knew that this was something I wanted to share with all of you.
Yes, Pacific Foods products are pre-packaged, but do you know what else they are? All natural. Some products are organic. These aren’t pre-packaged foods filled with artificial preservatives and chemicals whose names you can’t pronounce. This is real food, my friends. Do you follow a special diet? They’ve got something for you. Vegan? Gluten free? Covered.
So, I teamed up with them to share a recipe that would highlight their tasty products. I’ll be sharing pics from my backyard party later on this week, but for now, let me share with you one of the recipes that I prepared.
I placed two packages of their organic Refried Black Beans in a medium sauce pan and heated it on my stove top until the mixture was warmed throughout. Another alternative to this recipe is to brown one pound of ground beef and add it to one package of organic Refried Black Beans, but if you have vegetarians at your party, you may want to go the all refried bean route. After your beans (or meat and beans) are warmed all the way through, add two tablespoons of taco seasoning. I like to make my own to control the sodium, but you do whatever works best for you.
Now, the hard part is done. It’s time to assemble. We’re basically making a make-your-own-taco-dip bar for our party.
You’ll want to scoop a bit of your refried bean mixture onto your plate and top it with your favorite goodies. I used romaine lettuce, salsa, Monterey Jack cheese, and jalapeno peppers. You could also add sour cream or plain Greek yogurt. Even some avocado would be delicious. Serve it with some of your favorite tortilla chips for scooping, and you’re good to go.
This is a really tasty recipe, my husband and I have even been known to have this for dinner on occasion. No judging…if you load it up with veggies and go easy on the chips, it could almost be considered healthy! At least that’s what I tell myself…
