Oatmeal Raisin Granola Bars

granola_bars_1 It took years and years to convince my picky son to try a granola bar. Thankfully though, once I finally got him to try it, he was hooked. He now takes a granola bar in his backpack every day for snack time and will go through a box of them in no time at all. If I can get him to try switching to homemade granola bars where I can control what ingredients he’s eating, I’d be one happy mama. So, this weekend, I tried making my own granola bars. I’ve been searching for a basic, trusty recipe for a while and think I finally came across one that will work for us.

granola_bars_2 I found this recipe from Two Peas & Their Pod and was instantly intrigued. As a fan of coconut oil and using honey as a sweetener, I was immediately finding ways I could make this with items I had on hand. So, after a little tweaking to this recipe, and about an hour of my time, I was ready to try some homemade oatmeal raisin granola bars.

And trust me, friends, they’re tasty. A common problem with homemade granola bars is getting them to hold together when you take them out of the pan. These held together beautifully and had just the slightest hint of coconut flavor, definitely nothing too overpowering I sliced these into bars and placed them in individual snack size Ziploc bags and threw them in my pantry. They’re perfect for a breakfast or snack on the go and are most certainly better than any of the store bought granola bars I’ve tried in my days.

Oatmeal Raisin Granola Bars

Recipe adapted from Two Peas & Their Pod

Ingredients

  • 4 cups old fashioned oats
  • 1/4 cup whole wheat flour
  • 1 1/2 cup raisins
  • 1/3 cup light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey
  • 1 1/2 teaspoon coconut extract
  • 1 teaspoon vanilla extract

Directions

  1. In a large mixing bowl, mix together your dry ingredients until well combined.
  2. In a separate bowl, mix together coconut oil, honey, coconut extract, and vanilla.
  3. Pour wet ingredients over the dry ingredients and mix until well incorporated.
  4. Pour into a greased 9x13" baking pan and press down granola using the back of a rubber spatula.
  5. Bake at 325 for 40 minutes and allow to cool completely before cutting into bars.
  6. Place each bar in a small Ziploc bag to keep fresh.
  7. Enjoy!
