I always like what I share, but rarely do I devour the recipes that I share. Today is one of the days where I devoured what I made. I’m not ashamed…well, maybe I’m a little ashamed, but I’m also happy because it means that I’ll be sharing a super tasty treat with all of you.
Pizzelle cookies are a favorite of mine. They taste like a waffle cone and you can find them in lots of flavors. For this shoot, I used Pumpkin Spice pizzelles, but use whatever you can find. I knew I wanted to make a sandwich cookie with two pizzelles and a delicious filling using the Pumpkin Pie creamer from International Delight.
This recipe couldn’t be simpler, friends. It’s super, super simple.
Pizzelle Cookies with Pumpkin Pie Filling
Ingredients:
- pizzelle cookies (homemade or store bought)
- 1 small package of instant vanilla pudding
- 2 cups of International Delight Pumpkin Pie creamer
Directions:
- In a mixing bowl, mix together pudding and International Delight Pumpkin Pie creamer, following directions on the box of pudding.
- Pour pudding mixture into a loaf pan and place in the freezer.
- Freeze for 3-4 hours, until frozen.
- After pudding mixture has set, scoop out enough pudding filling to create a thin layer on your pizzelle. (You may have to use a knife to spread it around.)
- Top with a second pizzelle cookie and enjoy!
This treat is perfect for fall…it’s like fall in cookie form. Pizzelles with Pumpkin Pie filling, I know you’re all going to love it!
