The holidays are officially here. Obviously, that means it’s time to get into our kitchens and get baking. I’m excited to try a few new cookies this year, in addition to the cookies I’ve come to bake year after year. (Am I seriously old enough to have anything that I’ve made “year after year”? How could this be?!?)
When the good people at Nestlé were kind enough to send me some bags of the new Nestlé® Toll House® DelightFulls™, my mind instantly started buzzing with ways I could incorporate them into my holiday baking. When I saw that one of the packages I received was Milk Chocolate Morsels with Caramel Filling, I instantly thought of turtles. Turtles are perfect for the holidays! So, I decided I needed to make Turtle Shortbread cookies…and I’m so glad I did! Delicious shortbread, Nestlé Toll House DelightFulls, and finely chopped pecans make for a cookie that you’ll be proud to serve at your home or for your holiday cookie exchanges!
Turtle Shortbread Cookies
Ingredients:
• 1 1/2 cups softened butter
• 2/3 cups sugar
• 1/4 cup finely chopped pecans
• 1-2 cups Nestlé Toll House DelightFulls (caramel filled)
• 2 3/4 cups flour
• Pecan halves, for decoration
Directions:
- In a medium bowl fitted with a paddle attachment, cream together butter and sugar.
- Stir in flour, chopped pecans, and caramel DelightFulls.
- Shape dough into a log shape and wrap in waxed paper.
- Refrigerate for an hour or until dough becomes firm.
- Slice dough and bake at 375 for 8 minutes or until lightly browned.
- Top with a pecan half after removing from the oven and allow to cool on a cooling rack.
Full disclosure, this dough is finicky. If it starts getting crumbly on you, use your hands to soften the butter a bit and allow it to be shaped into place. Pack your patience and enjoy!
