Let me just put this out there really quickly. Simple desserts that taste amazing are the best.
The. Best.
They’re obviously the best because they require little time on your part, resulting in a delicious dessert that you and your family will enjoy, and…if I’m being honest, requires less work on my part when entering the recipe into my blog.
Sorry, guys, but I’m lazy…simple is best.
That’s why, when I found that I had a triple berry frozen fruit package in my freezer, I knew immediately that I was going to make a triple berry galette. Not a full on pie, but the lazy man’s pie…a galette. It’s less clean up, faster, and I had a sick child home from school, so heading into the kitchen for a big production wasn’t on my to-do list for the day.
All that needed to be done was to thaw out the berries a bit, add some sugar, cornstarch, and the juice of one lemon. Now your mix is ready to go into it’s pie crust shell.
(If you’ve never made a galette before, you basically pour the fruit into the center of your rolled out pie crust and then fold the edges up over the fruit a bit. It’s sloppy, rustic, and most importantly, delicious. Click here for a finished image of a galette, since I obviously failed to take a picture of mine…)
This would be a great idea for Mother’s Day dessert. The fruit makes it light and delicious, and you won’t have to spend all day in the kitchen. It’s a win for all involved!
Ingredients
- 1 package of frozen raspberries, blueberries, & blackberries, thawed slightly
- 1/4 cup sugar
- 2 teaspoons cornstarch
- juice of one lemon
- Pie crust for one 9" pie, homemade or store bought
- egg white
Directions
- In a large bowl, combine your berries, sugar, cornstarch, and lemon juice.
- Place berry mixture in the center of the pie crust and spread until about 1" from the edge of the crust.
- Fold the edges of the crust over the berries
- Brush crust with beaten egg white and sprinkle with fine sugar, if preferred.
- Bake at 425 degrees for 10-15 minutes, or until crust is nicely browned.
- Allow to cool because those berries will be HOT...then, enjoy!
