This probably isn’t going to be the most technical recipe that I ever post here. Basically, it’s because it’s not really a recipe at all.
Yes, it’s a fruit salad, but really, there’s not much work to be done here.
Just assemble your favorite fruits in a big salad bowl (you can even buy them pre-chopped from the grocery store if you’re in a rush…) and drizzle on some pina colada mix. I used the kind without alcohol because I was serving kiddies, but you do what you want. Who am I to turn my nose up to a drunken fruit salad? As a food blogger, I should just be happy that you’re getting your fruits in for the day, right??
*But be responsible if there’s any chance you’ll be serving kiddies. I mean, we all already know that, don’t we? But, a blogger can never be too careful…*
After you’ve drizzled on the pina colada mix, cover your salad bowl with some cling wrap and stick it into the refrigerator. This is the time when all those delicious flavors are going to mingle and get to know each other. Allow it to refrigerate for a few hours, popping in to mix it up every hour or so.
Now, if you feel like getting really crazy, sprinkle on some toasted coconut and toasted chopped pecans before serving.
But, only if you’re feeling crazy. It’s really good enough as it is.
Pina Colada Fruit Salad is a great choice for a summer picnic or a barbeque, all the best flavors of summer together and happily hanging out in one bowl.
Now, what to do with all that leftover drink mix……………….
